Black Bean & Feta Salsa ~ Great for Tailgating

I have a friend who is my "Go To Girl" for appetizer recipes!

One of my absolute favorite things that she makes is this Black Bean & Feta Salsa dip.  It is so delicious and extremely easy to make!

We have made this appetizer to take to football games, to parties, or just to have at home as a side dish.  It is always a hit!  There is a unique flavor that blends sweet and sour with texture from the beans and feta cheese!  I think it is best when made ahead and put in the refrigerator for a couple of hours, but you can also make it and serve immediately as well.

My favorite way to eat is with Tostidos Scoops!

Black Bean & Feta Salsa

1 can black beans (rinse and drain)
1 can shoe peg corn
Feta cheese
sliced green onions
1/4 cup oil (any oil)
1/4 cup apple cider vinegar
1/4 cup sugar or splenda
mix and chill for a few hours

Made salsa today and served with multigrain Tostitos scoops...oh my..so good. Please share other easy and delish appetizer recipes. Love your new home too!
